Rattlesnake Salad In reply to

1 medium rattlesnake, cut up 2 bay leaves 2 cloves garlic 1 teaspoon salt 1 teaspoon poultry seasoning 2 tablespoons sherry wine 1/2 stalk celery, finely diced 4 hard-boiled eggs, diced 1/2 onions, finely diced 1/2 cup chopped sweet gherkins 1 cup mayonnaise 1. Combine first 5 ingredients and boil until tender. 2. Chop meat finely and mix well with remaining ingredients. 3. Serve on sandwiches or over quartered tomatoes and lettuce

Rattlesnake Stew In reply to
Ingredients and Directions:
64oz canned beans
30oz canned stewed tomatoes
4oz canned diced jalapenos
1 large red onion
1 garlic clove, crushed
dash of salt
1lb ground beef
1/2lb rattlesnake meat

Put cooked beans into large pot. Add all ingredients and simmer for 10 minutes

Deep Fried Rattle Snake In reply to

2 Blocks of Butter
Garlic Powder
Salt
Pepper
Cream Cheese
Beer Batter
Tooth Picks
Lots of Deep fryin oil

Take long pieces of your rattle snake

Take cream cheese and add good size amount on your snake meat.

Add small amounts of garlic, salt and pepper to cream cheese.

Roll snake into long pieces.

Take your butter and melt it then take your snake and cheese and let sit in butter.

Take your favorite beer batter and let the snake sit in the batter for a matter of minutes.

You will need to stick your tooth picks in the snake when you fry or the cream cheese will go all over the place.

Then take your snake rolls and drop in oil . let fry tell golden brown and then enjoy.

1 Rattlesnake per person
1 Crab boil **
1 Egg
-Salt & pepper
-Green onion
2 tb Oil

Gut the rattlesnake and peel the skin off. Cook in a crab boil**. Cool and peel off the strips of meat.
Chop and combine with egg to bind, salt and pepper and a bit of green onion. Saute in oil until brown on both sides. Serve with tartar sauce.

Crab Boil.... ** water, lemon, and seed package for crab or shrimp

2 c Indian vinegar
1 Handful mint
2 Fingers coltsfoot salt
Cut off the head and skin and take out the intestines. Cut into 1" pieces. Wash in cold water. Put the vinegar, mint and coltsfoot salt in some kind of container; put the pieces of snake on top and cover with cold water. Let stand overnight. Put the container over the hot coals in the morning and simmer slowly for about 35 minutes. Remove from the fire and cool. The dish is ready to eat when the jelly has set.

BAKED RATTLESNAKE In reply to

1 recipe thin cream sauce
1/4 lb. fresh mushrooms, sliced
2 limes, sliced thin
1 tsp. basil
1 tsp. white pepper
1 tsp. rosemary
Skin the snake; dress and wash in cold water. Cut into 3-inch sections and place in a large baking dish. Cover with cream sauce and add the mushrooms, limes, basil, pepper, and rosemary. Cover tightly.
Bake in 300 degree oven for 1 hour or until done. One large can of sliced mushrooms may be substituted for fresh mushrooms
