[font "Verdana,Arial,Helvetica"][black][size 1][font ""][#000080][/#000080][/font][font ""][size 3]From: [/size][/font] [indent] [ul] [li]3 lbs turtle meat [li]3½ qts water [li]2 medium onions, finely chopped [li]1 branch celery, finely chopped [li]¼ bay leaf [li]2 sprigs parsley [li]6 cloves [li]1 tsp sugar [li]1 cup canned tomatoes [li]1 tbsp salt [li]½ tsp whole black peppers [li]3 tbsp butter[/li][/ul] [ol] [li]Wipe meat clean with a damp cloth [li]Cut meat from bones and add bones and gristle to water in a kettle [li]Add the remaining ingredients except butter [li]heat to boiling reduce heat and simmer covered for 1 hr [li]Strain and discard vegetables and bones [li]Meanwhile cut turtle meat in small dice, about ¾-inch [li]brown slowly in the butter until cubes are golden brown on all sides [li]Add browned meat and any remaining drippings to the strained broth [li]heat to boiling [li]reduce heat and simmer for 20 to 30 min until a rich flavor is developed in broth and the turtle meat is done [li]Do not overcook [li]Add more salt and pepper if needed [li]Serve piping hot
