Europeans love to eat them as a traditional food for Christmas dinner, small ones I use to cut up for bait! Orientals love to eat them too. Other than that I think they are a fun fish to catch, but fall into the junk category as far as I'm concerned.

I use Carp meat for catfish bait. Carp are somewhat bonny, but they would most likely be good to eat if filleted. There is a health advisory about Utah Lake and Carp. Carp in this lake have PCB's in their flesh. Other Carp waters in Utah are cleaner--no PCB's
