[size 3] [li]3 lb. Elk meat (cut in 1 1/2-inch cubes) [li]6 Carrots, pared and quartered [li]4 med. Potatoes (pared, quartered) [li]4 stalks Celery, cut up [li]2 Onions, quartered [li]1 tbsp. Sugar [li]1 tbsp. Salt [li]1/2 tsp. Pepper [li]2 tbsp. Quick cooking tapioca [li]1 (10 3/4 oz.) can Tomato soup [li]1 1/4 c. Water [li]1 (4 oz.) can Mushrooms [li]1/2 c. Burgundy wine
Place elk, vegetables, sugar, salt, pepper, tapioca, soup and water into a 4 quart casserole. Cover and bake at 300° for 4 hours or until tender. Just before serving, stir in mushrooms and Burgundy wine. Makes 12 servings.[/li][/size]
