Seafood Club Sandwiches

Prep: 10 min, Cook: 5 min. [ul] [li]8 slices bacon [li]8 slices whole wheat bread, or rye bread, toasted [li]2 Tbs. mayonnaise [li]1 tomato, sliced [li]1 cup alfalfa sprouts [li]4 lettuce leaves [li]1/2 lb. lobster meat or imitation lobster meat[/li][/ul]
Heat a heavy nonstick skillet over medium-high heat. Cook bacon 4-5 minutes or until just crisp. Drain on paper towels. Spread toasted bread slices with mayonnaise. Layer vegetables, bacon, and seafood on half the bread slices. Top with remaining bread slices.
