Shrimp-Rice Baking (Recipe Pictorial)

[cool][#0000ff]I have had some requests for my world "infamous" recipe on shrimp rice stuffing...to be used either as a bed upon which to bake fillets, or as a stuffing for whole fish or butterflied larger fillets.[/#0000ff]

[#0000ff]I managed to scrape up a few healthy whities and a small walleye over the weekend to serve as subjects for a recipe pictorial. The small walleye fillets are in the center of the dish in the first picture.[/#0000ff]

[#0000ff]To bake in an open dish, here are the basic ingredients. 9"X12" glass baking dish, 4 cups cooked white rice, 1/2 pound mushrooms, 1/2 pound shrimp (peeled and deveined), med. onion, 1 cube of butter, 2 tablespoons olive oil, fish fillets, seasoning (garlic salt and spicy pepper mix).[/#0000ff]

[#0000ff]The first step is to saute the onions and mushrooms in a half cube of butter with two tablespoons of olive oil to increase cooking temperature and add flavor. Note, you can add some chopped celery or other veggies to taste.[/#0000ff]

[#0000ff]Spread the cooked veggies (and leftover pan juices) over the rice in the baking dish.[/#0000ff]

[#0000ff]Next, arrange the shrimp over the veggies and press down into the mix a bit.[/#0000ff]

[#0000ff]Cover the decorated rice with the fillets. Thin slice the remaining half cube of butter and arrange evenly over the fillets. Season to taste with garlic salt and spicy pepper mix...or your choice of spices. A bit of minced garlic and/or some toasted sesame seeds can add extra flavor too.[/#0000ff]

[#0000ff]Bake for 25 to 30 minutes in a preheated 375 degree oven. You can switch to oven broil for the last few minutes if you want some browning on top of the fillets. You are "good to go" as soon as the fillets flake easily with a fork (or knife, or spoon, or whatever). Most fish is best if not overcooked.[/#0000ff]

[#0000ff]Serve into a shallow bowl to make it easier to chase down the rice with your fork or spoon. Some fresh hot bread and corn on the cob makes this a real winner. Leftovers can be microwaved and sometimes taste even better than fresh, after the flavors have had longer to blend together.[/#0000ff]

[cool][#0000ff]Try it with wipers. Use smaller fillets over the rice bed, and slit open the larger fillets and stuff them with the shrimp rice mix.[/#0000ff]
