tuna fish

Hey everyone so I will admit I am not much of a fisherman. I live in NY about 45-1hour above the city so when my dad was still alive and before he got real sick me and him would go to the local resavors on a row boat and fish... so anyway I am sitting here watching this show wicked tuna and I have 2 questions something I never saw before first I get the idea of putting multiple poles out but it seems they catch it on the pole and switch to a big reel that doesn't have a rod on it usually in the back corner of the boat. can anyone explain how this works? second how come sometimes they cut the gills out and sometimes they don't?
