We Are Back!

Hi guys we ran a few trips this week, we went out Thursday on the Bob Marlin, the guys found marlin and tuna about 16 miles out on the Pacific side, had a few 25lb tuna, 2 dorado about 35lb and lost 1 marlin.

We went out yesterday and caught 2 marlins, 1 on a lure and the other pitching live bait, also a few small tunas on cedar plugs.
Not many boats going out but looks like the fishing is pretty good, the blue marlin and the black marlin should be showing up real soon.

WEATHER: The outlook for Cabo San Lucas in the two weeks ahead shows the average daytime maximum temperature will be around 33°C, with a high for the two weeks of 35°C expected on the afternoon of Wednesday 15th. The average minimum temperature will be 25°C, dipping to its lowest on the morning of Wednesday 15th at 23°C. The fortnight ahead will have most days seeing a little rain. It looks like Sunday 19th will have the most precipitation with an accumulation of around 7.0mm. On the whole winds are likely to be moderate.

Brown Butter Lime Mahi Mahi with Avocado Salsa
Mahi Mahi also known as Dorado is a tender filet cooked golden brown then in soaked in a brown butter sauce and garnished with a fresh avocado salsa. An irresistible Dinner!

Ingredients

    1 Tablespoon Olive Oil
    4 mahi mahi fish filets
    salt and pepper

Brown Butter Lime Sauce:

    6 Tablespoons Butter
    3 Tbsp fresh lime juice
    1 tsp honey
    1 clove garlic minced
    1/2 tsp salt
    1/2 tsp pepper

Avocado Salsa:

    1 avocado chopped
    1 roma tomato chopped
    ½ of a small red onion chopped
    1/2 cup corn
    Juice from 2 limes
    2 tbs cilantro finely chopped
    1/8 tsp dash of salt

Instructions

In a large skillet over medium high heat, add the olive oil. Salt and paper the mahi mahi and cook until golden 4-5 minutes each side.

To make the brown butter lime sauce:

Heat the butter into a small saucepan. Swirl the butter occasionally until it has turned a light brown color and is fragrant. Remove from heat and whisk the garlic, honey, salt and pepper into the sauce.

Add the fish back to the skillet.

To make the avocado salsa:

Mix the avocado, Roma tomato, red onion, chopped cilantro, salt and juice from the limes in a small mixing bowl. Top the mahi mahi with the avocado salsa.


COCKTAIL

Piña Colada

Ingredients

2 1/2 oz. rum
3 oz. pineapple juice
1 oz. coconut cream
Ice

Directions

Start with the rum. Then combine with unsweetened pineapple juice (you can sub in 3 ounces crushed or whole pineapple), and coconut cream in a blender. Blend on high with a cup or so of crushed ice, or 5 or 6 ice cubes. Pour into a tall glass. Garnish with whatever you've got.

BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs. You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report.
