Jc’s Sportfishing Charters is a family owned and operated business and has been fishing in Cabo San Lucas for the past 18 years. Jerry, explains that his charter business is geared more for families and novice anglers, making sure everyone who charters a boat with him have a great time and lots of fun. We welcome families, and groups. We want everyone who fishes with us to take all the sites in and have a memorable experience. This is what is most important to us. From The Admiral Kitchen!
Pan-roasted dorado on fresh corn salad

Ingredients
4 portions dorado, about 200g each, filleted but not skinned
Olive oil
Maldon sea salt and milled pepper
Baby cos leaves

For the corn salad:
4 large sweet corn cobs
2  tablespoons good olive oil
3 tablespoons thick mayonnaise
2-3 tablespoons snipped chives
1 sweet red pepper, finely chopped
1 chilli, finely chopped (optional)

Instructions
Wash and dry the fish well. Slash the skin side. Oil and season the fish with salt. Pour a little olive oil into a heavy pan and heat on medium to high.
When hot enough, add the fish, skin side down. Cook for about 4 minutes until well browned and seared. Flip and do the same on the other side.
The fish should be beautifully browned outside but still moist. Add pepper to taste.
Meanwhile prepare the corn. Slice off the kernels with a sharp knife. Blanch in a saucepan of unsalted boiling water.
Drain and mix with the rest of the ingredients. Season to taste. Place the corn in wide bowls or large plates. Top with the fish and a handful of leaves. Add a squeeze of lemon juice and drizzle with olive oil.

SUMMER TANTALIZERS
Watermelon Martini
The watermelon martini tastes like summer! This festive vodka cocktail is easy to make and full of refreshing sweet flavor.

Ingredients
½ cup chopped watermelon (or ¼ cup watermelon juice)
2 large mint leaves
1 ounce (2 tablespoons) vodka
½ ounce (1 tablespoon) Cointreau
½ ounce (1 tablespoon) lime juice
1 teaspoon simple syrup
For the garnish: small watermelon wedge

Instructions

1. Chop the watermelon. Add the melon and mint to a cocktail shaker. Muddle (gently mash) them with a cocktail muddler or wooden spoon to release the juices. (If you’re using watermelon juice, simply muddle the mint first.)
2. Add the vodka, Cointreau, lime juice and simple syrup. Fill with ice and shake until cold.
3. Strain the drink into a cocktail glass. Garnish with a small watermelon wedge, if desired.

BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs. You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report. Until next time good fishing and we hope to see you in Cabo soon. Come by the office here in Cabo and get all the latest up to date fishing report.
