1 cup chopped celery[/size] [size 2]

1 cup chopped onion[/size] [size 2]

1 cup chopped green pepper[/size] [size 2]

2 cloves garlic, minced[/size] [size 2]

3 tablespoons cooking oil[/size] [size 2]

4 cups beef broth[/size] [size 2]

1 16-ounce can whole tomatoes, cut up[/size] [size 2]

1 bay leaf[/size] [size 2]

1 teaspoon salt[/size] [size 2]

1/2 teaspoon dried thyme[/size] [size 2]

1/2 teaspoon ground red pepper[/size] [size 2]

1/2 teaspoon dried oregano, crushed[/size] [size 2]

2 pounds fresh Catfish fillets, cut into bite-size pieces[/size] [size 2]

1 10-ounce package frozen sliced okra[/size] [size 2]

4 cups hot cooked rice[/size] [size 2]




In a large kettle or Dutch oven cook celery, onion, green pepper and garlic in hot oil until tender. Stir in beef broth, tomatoes, bay leaf, salt, thyme, red pepper and oregano. Bring to boil; reduce heat. Cover and simmer for 15 minutes.

Add Catfish and okra to kettle. Return to boil, Cover and simmer for 15 minutes or until fish flakes easily. Remove and discard bay leaf. Serve in bowls over hot cooked rice. Makes 8 servings.[/size]
