[#000080][size 1]SQUIRREL Dumplings by Dayemere[/size][/#000080] [indent][b]This is an excellent way to cook old squirrels which are too tough for frying. [ul] [li]2 dressed squirrels, 2 to 2½ lbs [li]2½ cups water [li]1½ tsp salt [li]Dash of black pepper [li]2 tbsp [li]Parsley [li]Dumpling Recipe [/li][/ul] [ol] [li]Wipe thoroughly with a damp cloth and [url "http://www.mountain-breeze.com/kitchen/game/fur.html"][#0000ff]pick off any hair [/#0000ff][/url]. [li]Remove any shot [li]Then wash well inside and out with warm water [li]Cut into serving pieces [li]Put squirrel into a kettle, add water and salt [li]heat to boiling, then reduce heat [li]cover tightly and simmer until very tender, from 2 to 3 hrs the time depending on age of animal [li]The meat should be almost ready to fall from the bones [li]Add pepper and butter [li]Increase the heat until liquid boils [li]Lay the rolled dumplings over the top of squirrel, cover tightly and cook for 12 to 15 minutes
