VENISON POT ROAST

[size 1]VENISON POT ROAST by lonehunter[/size] [indent] [indent]3 lbs. pot roast
¼ C. fat
2 medium onions, sliced
1 C. tomato paste or tomato meat sauce
1 C. water
¼ t. pepper
¼ t. ginger
1 T. salt
8 whole cloves
6 potatoes, halved
6 carrots, halved [/indent]

Brown meat well in fat in heavy kettle or roasting pan. Slip a low rack under meat. Add onions, tomato paste, water, and seasonings. Cover tightly. Simmer over low heat or bake in moderate oven (350°) for 3 hours or until tender. Add potatoes and carrots. Cook 30 minutes longer. Place on deep platter.
