Tuna, Spinach Patties [microwave]

[font "ARIAL"][#000080][size 3]Ingredients[/size][/#000080][/font] [font "ARIAL"][#004040][size 3]Preparation[/size][/#004040][/font] [font "ARIAL"][#000080][size 2] [ul] [li]1 [7-ounce / 200-g] can tuna canned in oil, well drained [li]8 ounces [227 g] spinach [li]2 ounces [57 g] margarine [li]1/4 cup [60 mL] all-purpose flour [li]5/8 cup [160 mL] milk [li]1 teaspoon [5 mL] lemon juice [li]Pinch of Cayenne pepper [li]Salt, to taste [li]1/4 cup [60 mL] fresh whole wheat breadcrumbs [li]1 egg [/li][/ul][/size][/#000080][/font] [font "ARIAL"][#004040][size 2] [ul] [li]Crumble tuna fish; set aside. [li]Well wash, drain and chop spinach. [li]Transfer spinach into a bowl, cover and microwave for 4 to 6 minutes on 'MAXIMUM', stirring once. [li]Microwave margarine, covered, for 30 to 60 seconds on 'MAXIMUM'. [li]Mix in 2 tablespoons [30 mL] of the flour and all of the milk; microwave, uncovered, for approximately 1 1/2 minutes on 'MAXIMUM', whipping mixture 3 times. [li]Thoroughly drain spinach; mix spinach, crumbled tuna fish, lemon juice, Cayenne pepper and salt into sauce. [li]Spread mixture onto a dish; refrigerate for at least 2 hours. [li]Shape mixture into 8 patties. [li]Trasnfer remaining flour onto a plate, breadcrumbs onto another plate. [li]Beat egg. [li]Coat patties with flour; brush patties with beaten egg and then coat with breadcrumbs. [li]Freeze, individually wrapped. [/li][/ul] To serve [ul] [li]Unwrap patties; arrange side-by-side into a shallow dish. [li]Thaw and reheat patties, on 'MAXIMUM', for 10 minutes. [/li][/ul][/b][/size][/#004040][/font]
