Baked Steelhead with Jalapeno Sauce

[ul] [li]One 3/4 to 1 lb. steelhead or salmon fillet [li]1 tbsp fresh lime juice [li]2 or 3 garlic cloves, crushed [/li][/ul]


Preheat oven to 350 degrees. Butter baking dish. Place steelhead in dish skin side down.

Mix together lime juice and garlic cloves and brush over fish. Sprinkle with salt and pepper. Let stand 15 minutes. Bake until fish is almost opaque, about 10 to 15 minutes per inch of thickness.

Meanwhile, prepare sauce: [ul] [li]1 1/2 tsp butter [li]2-5 jalapeno chilies, seeded and cut julienne [li]1/3 C sour cream lime wedges snipped fresh chives [/li][/ul]


Melt butter in small heavy saucepan over medium-low heat.

Add chilies and cook until tender, stirring occasionally, about 3 to 5 minutes.

Add sour cream and stir until heated through; do not boil. Mix in lime juice. Add salt and pepper.

Transfer fish to platter and spoon sauce over fish. Sprinkle generously with snipped fresh chives. Garnish with lime wedges.
Helpful Hint

When cleaning and cutting hot chilies, do it under cold water, wash hands with soap before handling anything else.
