[font "Arial"]10 - 12 dove breasts, cleaned (skin on), rinsed , and patted dry.
2 eggs, mixed
1 cup flour
salt & pepper to taste
vegetable or peanut oil
In a large cast-iron skillet, add 1 inch of oil. Heat over medium-high heat until hot. (Drop of water placed in oil sizzles. Oil should not smoke.)
Dip breasts in egg and season to taste with salt & pepper. Roll in flour.
Add dove breasts to skillet a few at a time and fry to a golden brown on all sides over medium-high heat. (Don't overcrowd the skillet).[/font]
