Cantonese Glazed Duck

1 or 2 ducks
1/2 teaspoon of salt
1/2 teaspoon of pepper
1/2 teaspoon of paprika
1 or 2 tablespoon of cornstarch
1/2 cup of water
1/2 cup of soy sauce

Wash 1 or 2 ducks cut into quarters. Season with salt and pepper on both sides. Put on rack skin side up and sprinkle with paprika. Bake at 250ºF. about 1 1/2 to 2 hours or until golden brown and free of most fate. Remove from pan and with sharp knife cut duck into bite size pieces. Remove all fat from pan, leaving the gravy. Mix 1 or 2 tablespoons of cornstarch with 1/2 cup water. Pour 1 1/2 or 2 cups of water into pan and stir in cornstarch mixture. Put about 1/2 cup of soy sauce in pan and return duck pieces to sauce and cook until duck is glazed and tender about 20 to 25 minutes. May be served as an appetizer or with wild rice to make a meal.
