1lb. of cow heart
1lb. of cow liver
3 Tbls. of black pepper

[font "Arial"][size 3]to clean intestines – run water through intestine until all bile is removed. Peel skin from off outside of intestines ( this is important, if you don’t it will be like eating a tire tube.[/size][/font]
[font "Arial"][size 3]cut intestines into 1 inch long pieces. Put in large pot [/size][/font]
[font "Arial"][size 3]cut fat from beef heart and any white skin that is left on it, there might be some tubular looking strand on the inside remove those also. [/size][/font]
[font "Arial"][size 3]Cube heart into ½ inch pieces. Put in pot. [/size][/font]
[font "Arial"][size 3]Cube liver into ½ inch pieces set aside. [/size][/font]
[font "Arial"][size 3]Add water to the pot until there is about ¼ inch of water over meat. [/size][/font]
[font "Arial"][size 3]Add black pepper, bring to a boil and cook for 10 minutes, then add liver continue to cook for another 5 minutes. [/size][/font]
[font "Arial"][size 3]Salt to taste [/size][/font]
[font "Arial"][size 3]Serve over rice. [/size][/font]
