Pikeman's Panko Perch Recipe

In a gallon size bag add: 3 cups Panko*
2 Tsp. Garlic Salt
2 Tsp. Season Salt
2 Tsp. Onion Salt
1 Tsp. Pepper


In a cereal bowl mix: 3 eggs
2 Tsp. Green Tabasco sauce

In another cereal bowl : Flour

Dip you wet Perch fillet first in the flour then in the egg then in the Panko mix. Fry in oil till golden brown on both sides.

* Panko is a japanese bread crumb found in the oriental section at most leading grocery stores.

Tarter Sauce

1 32oz. Jar Real Mayo
1 med onion finely chopped
1/2 tsp lemon juice
2 tsp. nalley sweet relish

Put all ingredients in a bowl and stir.

I can attest that this is good grub! Well worth trying for those of you hankerin' for some fine perch fillets.

Thank You, Thank YOU! I haven't cooked too many recipes but this was by far the best fish i have ever cooked! I cooked up 8 fillets from my Yuba perch and boy were they tasty...Panko style!! P.S. I didn't have any Green Tabasco but red Tapatio works great too!! Yum. After that I don't think i'd ever want to release another perch!
