I think that depends a lot on what you want to fish for? Are you thinking of ocean fishing, bass fishing or trout fishing? I know the Appalachians have some small trout streams. Check out the link http://www.georgia-outdoors.com/ngto/mstream.html. I know many southeastern States have good tailwater (below dams) trout fishing but not sure what Georgia has. A good source of information is a local fly shop. I know Atlanta has an Orvis store and probable a couple others. You could go in and ask questions and get directions to where to fish and pick up some appropriate flies to get you started. You didn't mention if you know how to cast. If you don't find someone to spend an hour or 2 to get you started or consider taking a class.

You have Atlanta Fly Shop and Orvis there, they will be able to help you big time. Not sure your regs, but you need to check them as to FISHING SEASON. Fly Fishing is just a type of fishing.

a lot of local fly shops have lessons.. sometimes for free.. you may also want to look at local fly clubs.. they usually offer classes of all sorts for members at little to no cost.. they would also be able to answer your question about fly fishing season more accurately.. but Id say in general when the fish are active its fly fishing time.. :-)
... also here is a link to the Georgia forum where you may get some useful information..

I learned how to fly cast off of youtube. Went to my local
park and practiced on the grass.
It was not very pretty at first but after few times out I got
it.
Now I can whip out a 100' cast with my 5wt or 7wt and
about 60'-70' cast pretty accurately. That is standing up.
When Im in my float tube its a little less of course.
Just give it a try and DONT give up.

If you make it over to the east coast sometimes you can check out:

Baystreet Outfitters
815 Bay St
Beaufort, SC
or
Low Country Outfitters, at Moss Creek village, just before you drive onto Hilton Head Island north of Savanna.

they both have a guide service and do teaching stuff. or at least they did a few years ago.
