Tender Caribou Cutlets - tubeN2 - 02-03-2004 3 pounds tender cut caribou steak 2 cups bread crumbs 1 tsp Garlic Plus 2 eggs, lightly beaten Pound steaks between sheets of waxed paper until ¼" thick. Dip steaks in beaten egg, then in seasoned bread crumbs. Heat olive oil and butter in a heavy skillet and fry steaks, a few at a time, over medium heat until browned on both sides, about 10 minutes. You can make a delicious creamy sauce if you like with the scrapings from the skillet, 2 TB butter, stir in 2 TB flour until lightly browned, add 1 can of chicken broth & ¼ each of orange flavored liqueur and heavy cream. Cook stirring constantly until thick and bubbly. Serve with baked potato or use in your favorite recipe. [signature] |
