Just one old man's opinion, but I have eaten catfish in many places, and always found the flesh to be a little sweet, not to my liking. (haven't tried TD's yet, so reserving opinion). But, I have eaten several mud cats, and found them to be small but great eats. Almost more work to get them small fillets, but worth it. They are a white flaky meat, not like other cats.

[cool][#0000ff]Glad you like that. I made it several years ago when I was catching (and cleaning) lots of big flathead cats down in Arizona. I have since converted it into my traveling fillet station by building a breakdown PVC (what else) support that goes under the hole and holds a large plastic garbage bag. The other end is either supported on the rear of my SUV or on a folding table.[/#0000ff]
